stefankoelle 19f492b7e0 Fix stefankoelle build: .eleventyignore blocks standalone build ...

- build:stefankoelle now temporarily renames .eleventyignore during build
- build-pdf.sh: restore .eleventyignore rename trick
- The root eleventy build ignores stefankoelle/ (uses shared/_includes
  which lacks stefankoelle.njk layout), so the standalone build must
  bypass the ignore file
